Thomas Collomb’s eyes light up when he talks about his profession as a chef. He holds strong convictions about gastronomy, believing it should be respectful of the mostly organic selected products and 100% local when it comes to vegetables. Thomas is relentless in his pursuit of excellence and respects the raw materials he works with, ensuring to preserve nature and what he puts on the plate. He is a complete chef, both sensitive and tough, who needs new challenges regularly to feel alive.
